Prepare a frying pan with lid on medium heat, and add just enough olive oil to cover the pan. Cut the chicken into strips. Use an eggbeater to whip up the egg whites in a bowl. Get those frustrations out. Dip the chicken strips into the egg whites and then into the bran flakes. Place the bran-coated chicken into the pan and cook through. Here’s the secret to this recipe: make sure you use the lid on the pan, this locks in the moisture and cooks then chicken quicker and makes it taste better.
